The timer is useful for timing the water flow through each group and for perfecting coffee extraction. This is critical because if the extraction using say 35ml of hot water runs too fast, essential flavour compounds may not have tome to be dissolved in the water, and too slow also presents issues with over extraction of undesirable compounds. This timer also enables the barista to time the brew on each of up to four group heads and to store the data.
